  • Dive into the fascinating world of brewing where foam and hops come together perfectly!

    Upon your arrival, you'll be warmly welcomed by Adrien and Mary, who will introduce you to the workshop and explain the fundamental principles of brewing. You'll discover different brewing methods and the secrets to crafting quality beer.

    Then, it will be time to create your very own beer recipe, as unique as your personality! You'll be guided in selecting the ingredients. Whether you prefer a wheat beer, a lager, or an IPA, the brewers will assist you in choosing the appropriate malts and hops to achieve the desired balance and flavours. You can also add additional ingredients from a variety available on-site.

    Once you've chosen all your ingredients, you'll move on to the mashing stage, where starch is transformed into sugar. You'll lift the grains and add the hops to give your beer its characteristic bitterness, before proceeding to cool the wort.

    The experts will guide you through the fermentation bucket setup and inoculation with yeast.

    To top it off, you'll have the chance to taste the house kefirs and kefir beer, providing a diverse range of flavours to accompany your brewing.

    After 2 to 3 weeks of fermentation, you'll return to the workshop to bottle and cap your beers.

    In the end, you'll proudly leave with your personalised beer bottles, ready to delight the taste buds of anyone daring enough to taste them.

    Wecandoo - Meet Mary

    Meet Mary

    Brewer

    Mary and Adrien embarked on their beverage journey as winemakers in Bordeaux, where they honed their craft for five years.

    In February 2019, this dynamic duo decided to leave Bordeaux and venture into the world of brewing. They transported all their brand-new brewing equipment and set up shop in Belgium, their home country.

    By the end of that same year, Mary woke up with a game-changing idea: "What if we launched our fruit kefir recipe we've been working on for two years? We already have all the equipment in our brewery." And so, the time had come to bring this idea to life, but not just any kefir! Mary and Adrien were aiming for an organic, sugar-free kefir.

    In January 2020, the passionate pair launched their first kefir, and since then, they've expanded their range to offer six different flavours. Despite this, they haven't forgotten their love for beer. They've created a kefir beer and continue to brew other beers.

    Their fruit kefir is made from small grains fermenting in water. These grains feed on the sugars in the water to create a slightly fizzy and subtly acidic beverage. The sugars are entirely transformed, giving the drink renowned probiotic properties. Fruit kefir is truly a "super beverage": rich in vitamins, probiotics, and beneficial for gut health and the immune system.

    While the fermentation process remains traditional, the brewers choose to ferment their fruit kefir in stoneware jars. They also have fun with the different flavours and tastes of the kefirs, offering each recipe as a perfect alternative to a glass of wine, beer, or soda.

    Sharing is also at the core of their motivations. They enjoy passing on their expertise and sharing the love of good products. Their goal is to provide education about brewing and create moments of conviviality.

    To represent the purity of their product, the two brewers chose the "shuǐ," a Chinese symbol for water and life, as the logo for their brand.

    Their workshop is located in Lasne, nestled in the heart of a green environment. It's in this idyllic setting that Mary and Adrien warmly welcome you with a smile for brewing workshops.
