  • Embark on a journey through the sustainable heart of urban farming with a visit to De Stadsgroenteboer, where Andres, a devoted cultivator, stewards the land.

    This 1.5-hour workshop offers a unique immersion into the workings of a small yet prolific farm nestled on the outskirts of Amsterdam. Here, over 60 varieties of vegetables and more than 15 herbs thrive, cultivated not only for the local community but also for a dedicated Community Supported Agriculture (CSA) network.

    During your time on the farm, Andres will be your guide, offering a wealth of knowledge about the farm's cultivation methods and the diverse range of produce grown ā€“ from familiar supermarket staples to lesser-known delicacies such as radicchio, frills, mustard blood or minutina.Ā 

    De Stadsgroenteboer is committed to bio-intensive farming practices, ensuring the fertility and health of the soil through the use of compost, green manures, and other innovative natural methods. Their ethos is grounded in producing food that is not only direct and honest but also beneficial to our ecosystem. Their efforts forge a communal spirit around the produce they lovingly grow.

    Andres, a Colombian culinary expert based in Amsterdam, has traversed an unconventional path from chef to butcher and ultimately to farmer, driven by a vision to overhaul the global food paradigm.

    His endeavour at De Stadsgroenteboer marks a commitment to ethical farming practices that respect both people and the planet.

    Ingrained with his homeland's rich culinary heritage and his grandmother's wisdom, Andres champions the idea that food transcends mere nutrition. It acts as a universal language, binding diverse cultures. His global gastronomic pursuits, spanning Italy to Argentina, have not only refined his skills but have also shaped his philosophy on the importance of community and connection in food production.

    Andres' shift to agriculture was a decisive step towards influencing how society values food. Settling in the Netherlands, a leading food exporter, he embraced farming with a vision to begin change where it matters most ā€” at the source. De Stadsgroenteboer, although modest in size, is prolific, cultivating over 60 varieties of vegetables and a multitude of herbs through sustainable, bio-intensive methods that prioritise soil vitality.

    Additionally, Andres has a venture, JARA, crafting salsas from surplus local farm produce. This initiative is not only a nod to his cultural heritage but also reinforces his dedication to a food economy that is sustainable, inclusive, and conscious of its environmental impact.
